Vegetarian Kampot Chilli


Ingredients

  • 2 onions, chopped

  • 3 garlic cloves, minced

  • 2 bell peppers, chopped

  • 1 can kidney beans

  • 1 can pinto or white beans

  • 1 can chopped tomatoes

  • 1 can tomato sauce

  • 1-3 tspn chili powder

  • 1 tspn ground Kampot pepper

  • 1/2 tspn dried basil

  • 1/2 tspn sea salt

  • 1/4 tspn red pepper flakes

  • 1 Tbspn olive oil

Method

  1. Cook onions, garlic and bell pepper in olive oil until soft.

  2. Add remaining ingredients and simmer for 30 minutes.

  3. Spoon into bowls and garnish with cheese or avocado
